I pull on my stretchy pants
And now I need to go on a diet. The shaved ice with condensed milk and grass jelly, a Chinese dessert, really hit the spot on a hot and muggy summer day. Are you drooling over those Tex-Cajun fries from BB's Cafe? Yep, those are shoestring fries, smothered with queso, gravy and roast beef. And then I housed a poboy, also dripping with queso, after eating half of that platter. It was Friday, I get a pass. This weekend, I made monster pancakes for breakfast with Pioneer Pancake Mix, which is really quite stellar. In a previous life, I actually did a tour of the processing plant in San Antonio that makes the mix and visited their onsite restaurant, where they whip up all sorts of baked goodies. Unfortunately for my breakfast diners, I didn't let the pancakes cook all the way through so they were still goopy with batter in the middle. Oh well, live and learn. And finally, the piece de resistance - truffle oil, arugula and ground turkey pizza from scratch! I made the crust and everything! My pizza ended up being so simple and quick that I think I'm going to do this every time now instead of ordering out for pizza. What type of pizza should I bake next?
Quick and easy pizza dough recipe
Adapted from All Recipes
Ingredients:
3 cups all-purpose flour
1 package active dry yeast
3 tablespoons olive oil
1 teaspoon salt
1 tablespoon white sugar
1 cup warm water
Combine flour, salt, sugar and yeast in large bowl and mix in oil and warm water. Roll out as thin as desired and place on pizza pan. Top with whatever you'd like (I left the arugula off until after the pizza was cooked).
Bake at 375 degrees for 25 minutes.

Yum! I could easily eat all day. Food makes me happy :) Haven't made pizza dough in forever, will definitely try out your recipe.

ReplyDeleteYour two dishes are the most appealing of the four. What a great looking pizza! Now I feel like my dinner tonight was really just a waste of time. :) It wasn't quite as hot today (only humid), otherwise the sight of the shaved ice would be too much.
ReplyDeleteI make pancakes two or three times a month (always on a weekend), but they never look like yours. That pancake is pretty, mine....well, they're pancakes. I've been using Bisquick--and perhaps turning the heat up a little too high.
The fries look similar to a Canadian dish called poutine (which I've only seen, never tried), I like the idea of those items combined into a single dish.
My friends and I made a Chef Boyardee pizza many years ago. We were so proud, but it really wasn't very good. That's as close as I've come to making a pizza.

Ahh, that shaved ice looks so good! My husband makes a delicious pizza with maitake mushrooms and smoked gouda from our local farmer's market. Homemade pizza is the best!

ReplyDeleteYum! And my favorite pizza at the moment is anything simple. Olive oil, instead of tomato sauce, for instance. Although, we got a Thai chicken pizza awhile back--the sauce was sweet chili sauce. Be still my beating heart . . . SO good!

All of these look so delicious! We've finally been getting some summer heat here and my favorite way to cool down has been getting some Chinese shaved ice with condensed milk! Nothing better on a hot day than some fresh fruit :)

I really want those fries so badly! The shaved ice looks great too. We have a chain out here called SnowFlake which serves shaved ice like that. I really want to try it one day. I am intrigued.
